Chocolate Chip Cran Oatmeal Cookies

Oatmeal. Sweet cranberries. Dark chocolate. Coconut. It’s all in there.

But the best part is that these chocolate chip cookies are completely clean and guilt-free.

I’m not joking. These are absolutely to-die-for.

These cookies are sweetened with ripe bananas. There’s fiber from the oats and the fruit. Fiber helps to keep our blood sugar levels from spiking as much when we eat higher glycemic foods. 

Play around and substitute with what you’ve got on hand. I’ve seriously been dreaming of subbing dates and pecans for the cranberries and chocolate chips in this recipe. No cranberries but you’ve got raisins? Try that. No shredded coconut but you’ve got chopped walnuts? Awesome.

Go ahead, have one (or even two!) of these guys. And feel good about the fact that you’re indulging your sweet tooth in a much healthier way.

Chocolate Chip Cran Oatmeal Cookies

Makes 12 cookies

Ingredients:

  • 2 medium ripe bananas
  • 1/2 cup of almond meal/flour
  • 1 cup of old fashioned rolled oats
  • 1/3 cup of unsweetened shredded coconut
  • 1/4 cup of dried cranberries
  • 2 tablespoons of dark chocolate chips
  • 1 teaspoon of vanilla extract
  • Pinch of sea salt

Directions:

  1. Preheat oven to 350 degrees.
  2. Mash the bananas very well with a fork until smooth.
  3. Mix the mashed bananas with the rest of the ingredients in a large bowl until everything is well incorporated.
  4. Shape the cookies into 12 uniform-size servings and place them onto a parchment paper-lined baking sheet. Press down lightly on each cookie to slightly flatten.
  5. Bake for 15 minutes or until the bottom of the cookies are golden. Store the cookies in a covered container in the refrigerator for up to a week.
