Dairy-Free Potato Soup

Dairy-Free Potato Soup

This is quite possibly the tastiest comfort food that I’ve ever made. Really. I took my mom’s down home potato soup recipe and made it dairy free so it’s easier on digestion. The result is comfort food perfection. This recipe makes a pretty big pot of soup. Freeze half of it if you’d like, and just use water or more broth to thin it out a bit when you reheat it. Dairy-Free Potato Soup Makes about 8 servings Ingredients: 1 cup of cashews 4 stalks of celery 1 bunch of green onions 5 medium baking potatoes, scrubbed and cut into 1/4 inch chunks 1 1/2 cups of diced...

Fudgy Date Almond Butter Brownies

I’ve learned over the years that I can have the occasional bite of something sweet and still maintain a healthy, balanced diet. Health coaches call this the 90/10 rule. But for the most part, I prefer to indulge in sweet treats that I’ve made myself. I love making delicious, homemade treats at home with my daughters, with clean ingredients that won’t derail my sensitive digestive system, or spike my blood sugar.  Unsweetened, dark chocolate is high in antioxidants and falls under both the “superfoods” and “good mood foods” categories....

Sweet & Creamy Tomato Bisque

Sweet & Creamy Tomato Bisque

This tomato bisque recipe was inspired by a little restaurant down the street from where we live.  I can still remember the first time I tasted the tomato bisque at Cheers on a cold and snowy winter day — it was sweet, it was creamy, it was just a little bit chunky. It warmed me up and it tasted delicious. It was perfect. I think this recipe comes pretty close to that perfect bowl of tomato bisque. It’s incredibly easy to make and it’s perfect on a cold day with a sandwich or a green salad. And, my version is dairy-free.  Sweet & Creamy Tomato Bisque Prep Time: 10...

Vanilla Almond Butter Date Smoothie

I am in LOVE with this smoothie.  Getting plenty of protein in for the first meal of the day is crucial for both women and men. It basically sets up the tone for how hungry you’ll feel for the rest of the day. This smoothie is packed with protein, good fat, and fiber which we all need for a healthy gut.  Don’t be afraid of a little bit of sugar from the medjool date. Dates are full of vitamins, minerals, and more fiber, plus they taste great. Just keep it to one date and don’t sweat it. It’s balanced out with all the protein, fat, and fiber in this smoothie.  I prefer...

My Book Recommendations For December 2017

I LOVE to read. A lot. Lately I’ve read a lot of yoga teacher books (I’m completing my yoga teacher training, hooray!). But in between all the anatomy and sanskrit textbooks, I’ve still managed to sneak in some non-yoga books over the past few months. Reading will change you for the better, in some way or another. I believe it’s important for us to always be learning, about something, anything. Healthy lifestyle, happiness and fulfillment, parenting…even reading fiction helps to expand your vocabulary. And I truly believe we become what we think. One way...

Chocolate Chip Cran Oatmeal Cookies

Chocolate Chip Cran Oatmeal Cookies

Oatmeal. Sweet cranberries. Dark chocolate. Coconut. It’s all in there. But the best part is that these chocolate chip cookies are completely clean and guilt-free. I’m not joking. These are absolutely to-die-for. These cookies are sweetened with ripe bananas. There’s fiber from the oats and the fruit. Fiber helps to keep our blood sugar levels from spiking as much when we eat higher glycemic foods.  Play around and substitute with what you’ve got on hand. I’ve seriously been dreaming of subbing dates and pecans for the cranberries and chocolate chips in...
