  My diet used to be much different than it is now. Actually, my view of healthy eating used to be much different. I went through a long phase when I was obsessed with calorie counting. It basically consumed my day, how many calories have I eaten? What’s left before I hit “that mark”?   These bites are so good! They taste just like a lemon square — one of my favorite desserts. These are a healthier version though and actually have ingredients that are good for you. They’re super simple to make and are very versatile. Use whatever raw nuts and seeds you have on hand. Lemon screams summer to me, and the citrus flavor of these bites is perfect.
